He found it in one of the most curious neighbourhoods of Jerez, full of history and art, which also corresponds to the highest point of the city, where the air of Poniente and Levante runs well, the street is called Molino de Viento (Windmill). In the past, the waters of the Atlantic Ocean dotted with saltpeter the area where the winery is located.
It was at the time, part of the oldest firm of Jerez, Cabeza and Zarco, and although it was officially founded in the year 1750, in the archive there are documents that prove its bigger antiquity, dating back to 1653. In one of the columns of old stone, which supports the semi-circular arches of the two-street cellar, is a shield carved in the stone and an inscription. On the shield, a cross on some waves, the cross of the sea, and the inscription says that it was rebuilt -therefore, it had to exist before- in the year 1767. This date and the cross on the waves, defined the name of their wine: Palo Cortado de la Cruz of 1767, under the Jerez - Xérès - Sherry and Manzanilla of Sanlucar de Barrameda, Appellation of Origin, made with Palomino Fino grape from vineyards located by the sea at Chipiona with biological ageing under Veil of Flower (Flor) and oxidative ageing in envined butts over 50 years old, of American oak, throughout the slow process of the Criaderas and Soleras system during over 16 years.
